I found this server called PurpleSMP and it feels super chill. It is a PvE world so you can just relax and not worry about getting hunted all the time. The idea is to hop on build something cool and hang out with the community.
The server uses an in depth skill system with McMMO so as you play your skills level up and it makes normal Minecraft stuff feel more fun. They also use GriefPrevention so you can claim your land and protect your builds from getting wrecked.
There is a Brewery plugin where you can brew distill and age different drinks. It sounds like there are a bunch of recipes to figure out so that gives you something to mess with when you are bored.
You get access to vaults so you do not have to carry everything on you after a big mining trip. That makes storing your loot a lot easier. The server also has crossplay so you can join from different devices like console or phone.

This is a semi vanilla survival server that feels really active and friendly. It is focused on community and building and just playing normal survival with other people.
The economy is based on diamonds so players trade and use shops with them. There are player shops and a shop menu so you can browse stuff easily. You can claim land with a golden shovel so your builds do not get griefed.
The server is PvE so it is about surviving and exploring not just fighting other players. There is no griefing allowed and there is no keep inventory so dying is still scary.
There is a live world map you can check in your browser and there are separate resource worlds so the main world stays clean. You can earn ranks and vote rewards just by playing and voting which gives you some nice perks.

This is a small semi vanilla server run by two friends who just started it. Right now it is just them and they want to grow up to around 20 players total so it stays cozy.
The server is invite only and has an age range around 13 to 23. English is not their first language but they can talk fine and just want chill people who are nice and relaxed.
The end dimension is not going to be open for anyone. There will be lore on the server but you do not have to join the story if you do not want to. You can just play normal survival and hang out.
They do not want people who only want to kill and grief. The goal is to talk have fun build and maybe join some lore moments while they stream and make YouTube videos on the server.
