EncoreSMP is a simple vanilla style survival server on Java 1.21.1 that was started about a month ago. The owner built their base far away so the spawn area is still pretty fresh. Near spawn there is only a mob farm and a sugar cane farm so the world feels almost new.
The owner wants the server to stay as hands off as possible. They work a normal 9 to 5 job and usually play in the evenings or on weekends. They will try to fix technical problems on the server but social problems might not get handled fast. The idea is that people follow the rules in the discord and help shape the kind of chill world they all want to play in.
The server is almost completely vanilla. There are a few quality of life datapacks like multiplayer sleep a coordinates HUD and AFK display. Server side mods are only for performance. Simple Voice Chat is not installed right now and voice chat is not required since the owner is rarely in voice.
Players of all skill levels are welcome. The owner says they are an average Minecraft player and just wants people who like to play regularly and enjoy survival together without worrying about being super good at the game.

This is a brand new Minecraft server made by someone for the first time so it feels pretty fresh and simple.
The server owner is really open to ideas and will add mods if you ask for them so players can help shape how the server feels.

Sunset Retreat SMP is a small seasonal vanilla plus server for players who are 18 or older. It is based in the EU so it is great if you are in that region and want better connection.
The server is focused on chill survival with only quality of life add ons. It has voice chat so people can talk while they play. There are mob and player heads and a world map so you can see the world from your browser. The server also lets bedrock players join so more friends can play together.
There is a diamond based economy where players run their own shops. You can buy and sell items and services with other players instead of dealing with huge plugins. It feels more like normal Minecraft but with a real player market.

I found this server called CompleteVanilla SMP and it is a fully vanilla survival world. It just started today so everyone is still early in the game and you do not feel super far behind.
The host is named Mabon and they want players who like playing with different kinds of Minecraft players. It is whitelist only so you have to apply before you can join which makes it feel a bit more safe.
The server also supports cracked accounts so more people can get in. It is on version 1.21.11 so it has the latest features from Minecraft right now.
If you want a simple vanilla smp with no extra stuff and a fresh start this server looks like a good place to join fast before everyone is stacked.

This is a survival pvp server called North Survival and it just started Season 2 so it feels really fresh and new.
The server runs on Minecraft 1.21.4 and it supports all 1.21.x players. It has click villagers so trading is super easy and faster than normal. There is also rtp so you can find a new place to build without walking for a long time. You can use tpa so you can teleport to your friends and play together faster.
The spawn is protected so you do not get instantly wrecked when you join. There is a custom ui and the server performance feels stable so it does not lag a lot. The community is looking for new players to join for the new season and help grow the server.
