I found this server called TFMC and it is a vanilla Minecraft roleplay server that really wants your choices to matter. You do not need any mods to join. You just hop in and start roleplaying and what you do can change the world.
The theme is a mix of medieval fantasy and steampunk which is pretty cool. The world is fresh and has nations politics and even war between them. You can pick different professions like Smith Alchemist Engineer Miner and more so your character actually has a job.
There are custom mobs and dungeons plus special gear and spells and magic so it feels more like an RPG. The server has MMO style progression with big world events and lore that keeps evolving over time. A lot of the systems are built for roleplay and they can have real consequences for your character and the world.
One of the wildest things is the custom vehicle plugin. You can use planes ships trains and more stuff that you do not usually see in Minecraft. They also use a custom resource pack but it still works with vanilla.

LegionCraft is a OneBlock survival server where you start on a tiny island and slowly build it up. Every block matters and you grind your way forward.
There are custom OneBlock islands so it feels different from normal skyblock. You can expand your island and try to dominate your own little world.

MCZSMP is a semi vanilla Minecraft SMP that feels really close to normal survival but with tiny improvements that make things a bit more efficient. It is not pay to win and it is meant for people who want to chill and have fair gameplay with others.

ShovelCraft is a semi vanilla SMP that is made for people who like to build and stay for a long time. The whole idea is to make a shared world where towns and teams and stories grow slowly and do not just reset when people get strong.
The world is split into two zones. In the green zone there is no pvp no stealing and no griefing so people can build and trade and roleplay safely. In the red zone pvp is on and stealing is allowed so you can fight and do risky trips but you still cannot just blow up bases.
The end is turned off so there are no elytras or shulker farms. People move by land sea and nether which makes the world feel bigger and makes roads and boats and nether routes important.
The server is meant to last a long time with no planned resets. There is a diamond based economy and teams can level up by using diamonds to unlock perks like extra warps shared storage and more member slots. There are also seasonal competitions that give lore style rewards like armor trims and shulker boxes.
Gameplay is mostly vanilla with some small quality of life commands like home tpa duel and shops. There are no pay to win perks and donor stuff does not give advantages. Voice chat is optional if you want to talk while you play. The version right now is 1.21.11.

AfterFlight SMP is a survival world that is built around different races and seasons. When you join you pick a race. Each race has its own permanent potion effects and its own spawn point. The idea is that every race builds its own little community base and players hang out and grow together.
The server moves through seasons that unlock different dimensions. At the start only the overworld is open. When season 1 tasks are finished then season 2 starts and the nether opens. Later season 3 opens the end. Season 4 is a legacy season where players who get elytra can earn special rewards and buffs.
When the season cycle restarts the nether and end reset but the overworld stays the same and the border just expands. The owner changes things based on what the community says so players actually help shape how the server works over time.
Right now the server is almost ready and the community is still small so new players can join early and help build up the races and events from the start.
