This server is called North Survival and it is on Season 2 so it feels like a fresh start for the new year. It is a survival world with PvP so you can build a base and also fight other players.
The server has click villagers so trading is easier and you can manage your stuff faster. There is RTP so you can find a good building spot without walking forever. It also has TPA so you can teleport to your friends and play together quicker.

Foggy Willows is a server for people who really want vanilla Minecraft with no tricks. It runs on the normal minecraft server jar and has no plugins and no datapacks at all. The game feels exactly like singleplayer but with other players around.
The server is hard mode and there is no tp or sethome. There is no world border so you can walk and explore as far as you want. You just play how you want build what you want and deal with the normal game rules and dangers.
There are no donations so there is no pay to win and no ranks from money. The spawn is simple and not confusing. Players are expected to handle their own social problems and talk things out themselves. Technical players are welcome if you like redstone or farms or other vanilla mechanics.

UneasyVanilla is a Minecraft server that tries to stay as close as possible to how the game was made.
It is a vanilla anarchy style server where you get tons of freedom. There are no gameplay changing plugins. There is no teleport no sethome and no grief protection. There is also no preset economy so players make their own trades and rules.

Headrest SMP is a survival server on Paper with a small set of quality of life plugins. It runs Minecraft 1.20.10 and has a pretty active community that likes both building and fighting.
The server is PvP focused and there is a safe zone at spawn where players can build shops and hang out. In that area people talk with each other using a simple voice chat mod. Outside spawn wars can happen and players can team up or betray each other.
