CaveMC is a semi anarchy survival server where the overworld is completely underground. There is no surface at all. The whole world is just caves with custom generation made by real Minecraft developers.
Season 2 is a fresh start for everyone and the server is enhanced vanilla. The caves have different biomes resources and structures so it feels like a full world but under the ground. Survival is really hard and only players who plan and grind will last long.
There is also a new Wasteland dimension. It is a big expansion with its own custom generated map. In the Wasteland you can fight for brand new powerful gear search huge mega structures and uncover secrets and resources. The Wasteland has its own currency and a new player economy so trading and buying stuff feels different there.
The server has a new spawn built for this season and for the Wasteland challenges. From what I see the whole idea is to create a brutal underground experience with lots of exploration pvp and grinding for the best gear.

This is a small modded survival server that only uses three mods so it feels close to normal Minecraft but with some cool help.
The mods are mainly for harvesting. There is a mod for ore harvesting and one for tree harvesting and one support mod that makes them work together. It is not a crazy modpack and it is easy to understand.
The server is survival so you can go explore mine and build how you like. You can use any resource packs you want so your game can look how you like.

This is a cozy vanilla survival world that feels like singleplayer but with a bunch of people around. There is no fancy spawn and no lobby. You just play normal survival Minecraft with other players who like kindness and being chill.
The community is really focused on being inclusive and nice. Stealing and griefing are not allowed at all and they ban for that. They also have tools to rollback damage and to check chest and container logs. So if something gets stolen it can be found and fixed.
PvP is only allowed if both players agree. So nobody can just run up and kill you. But you can still find friendly duels going on if you like fighting for fun.

I found this server called Rattata SMP and it is made for players who are 18 or older. It is a simple community where people just want to play Minecraft together and keep it close to vanilla.
The rules are really basic. Do not grief and use common sense. That is pretty much it. There are no teleport commands and no boosted loot or weird custom world stuff. It is just normal Minecraft gameplay.
The server runs on hard difficulty so you actually have to pay attention and play smart. They also use a system where only about a third of the online players have to sleep to skip the night which makes things easier for groups.
There is a whitelist so you have to apply before you can join. They also have a live map so you can see the world from a browser and plan builds and explore with others.

This is a small Minecraft server that feels really polished and planned out. It has a Skyblock world and a Survival world and both are made to feel satisfying and not like every other random server.
Skyblock is focused on competitive island progression. You build up your island and try to climb the leaderboards and grow your own little empire. It is for people who like grinding and racing others in a fair way.

Oathwood is a towny survival server that is meant to last a long time. It is not one of those reset all the time worlds. When you join you can settle land build up towns and try to make a name that feels real.

This is a new Minecraft server that is totally free to join and it opens around 1pm UTC on the 25th of December.
The server is kind of simple but it keeps getting updated while people play. The owner adds new mods and plugins and other changes as the server goes on so it does not stay the same forever.

This server is called Nation States and it is a new semi vanilla world that uses the towny claiming system. When I joined it felt like the whole point was to build nations and not just random bases.
The server wants players to focus on roleplay lore and conflicts. That means people are expected to act like they are part of a real nation. You are supposed to do diplomacy trade and even war with other players.
There is something they call the spirit of the server. It is about having fun roleplay good lore and actual conflicts between groups. If you ignore that and just try to ruin the experience they will remove you to protect the server.
The theme is early antiquity so it feels like a really old world style. The map is a custom map that is about 5k by 5k so it is big but not too huge. It makes nations feel close enough to meet and fight.
