I found this server called The Coffee Pot SMP and it feels like someones cool home project that is finally ready for more people.
It is a Minecraft network with five different worlds. There is a main SMP world with an economy system land claiming and some quests so you can actually have stuff to work on. There is also a hardcore world if you like playing on the edge and an adventure world that uses their old realms map so it has some history.

WolverVerse is a new Cobblemon server that feels really relaxed. It is casual and mainly PvE so you do not have to sweat super hard in fights. Right now the community is small with about eight active players and people actually talk and play together.
The server runs Minecraft 1.21.1 with Cobblemon 1.7.1 and it has its own modpack on CurseForge. After you install it you need to turn on the resource packs in your settings or you miss a lot of the cool stuff.
There are shiny weekends where shiny rates are boosted so it is easier to hunt your favorite partners. The server has a battle pass system plus raids and breeding so you can build teams in more than one way. Anarchy Network is a semi anarchy Minecraft server that tries to stay close to vanilla survival. It has very few rules and very few changes so it feels like regular Minecraft but with more chaos. The server is hosted in New York City and it runs all the time.
You can join on Java versions from 1.7.2 up to 1.21.10. They say 1.21.10 is the best version to use so stuff does not break. The world border is huge with two million blocks so there is a lot of space to explore and hide.
