Grub Lounge is a PvP lifesteal server that is going into a big beta test. The whole point is to break stuff and find all the bugs and crazy exploits before the real launch.
You gain and lose hearts when you fight so every duel can change your max health. There are claim and territory systems plus custom raiding tools so bases are not really safe if people figure out how to get in. The world is custom generated with special monuments and bosses that have their own mechanics and loot.
There are lootable crates and chests that only give rewards one time then they despawn. There is also a player economy with an auction house and shops that they are still balancing. A lot of custom items and artifacts tie into the progression and scaling systems that are being tested.
The owners want players to push everything to the limit and report dupes exploits balance issues confusing mechanics and performance problems. Progress might get wiped and things will definitely change. Abusing mechanics during beta is actually good but doing that after launch will get you banned.
If you like testing servers and trying to break Minecraft stuff this beta looks pretty fun and chaotic.

Foggy Willows is a server for people who really want vanilla.
It runs on the normal minecraft server jar. There are no datapacks and no plugins. There is no crazy spawn with quests or shops or stuff to read.
You just join and play survival in hard mode. You decide how you want to play and what you want to build. Technical players are welcome and can do their redstone and farms.
There is no world border and no teleport or sethome. Players are expected to deal with their own social problems. The server is always on the latest stable vanilla jar and it is self hosted on a machine made for it.
There are no donations at all. The server also has a Discord and it is Java only.

This place is all about staying connected even when the server wants you gone. It is built around an auto reconnect system so if you get kicked or the server is unstable it just tries to get you back in again.
I saw that you can set it up to run commands when you join so stuff like login or home is easier. It also lets you repeat commands which is nice for people who like afk farms or just want simple loops running.
There are different profiles for different servers so you can have separate rules and setups depending on where you play. It also has some safety things like rate limits so it does not freak out and spam.
You can see a countdown for when it will try to reconnect again and it uses a bit of random delay so it does not look super bot like. There is also a clean settings screen so it is not all text files and confusion.

Pixel Springs is a cozy modded SMP on Minecraft 1.20.1 that is made to be long term and not reset all the time. It feels like a place where you can actually settle down and keep your builds forever.
The server is built for builders collectors farmers and chill players. There are a bunch of builder style mods so you can decorate your base a lot. There are also tons of farming mods so you can cook food and complete meals and you earn in game currency for doing that.
If you like collecting stuff there is a custom FTB Quests system that helps you track items and get rewards while you play. There are magic mods like Botania Hexerei Mystical Agriculture and Ars Noveau so magic players have a lot to learn and play with.

The community is small and friendly and the server started about three months ago so it still feels new but it is meant to last a really long time. There is an active admin team that answers questions and keeps working on the server and there are frequent backups so the world stays safe.
