Headrest SMP is a paper server that feels like a small world where everyone actually knows each other. It runs on version 1.20.10 and uses some simple quality of life plugins that keep fights fair and the server smooth.
The server is all about survival with PvP and lore. People build bases and shops but they also fight and join in on wars. There is a safe zone at spawn where PvP is off so players can build shops and chill together and talk with the simple VC mod.
In combat there are extra rules from plugins like no elytra during fights and a combatlog plugin so people can not just run away in unfair ways. It makes battles feel more real and more intense.
The community wants to be a place where anyone can make friends but also betray them later if they want to. You can join a tight group start conflicts or just hang out and build while others fight.
The server runs on a strong dedicated machine with 20GB of ram and a 5800x3d cpu so it is made to avoid lag and keep fights and big builds running smooth.

Sacreo SMP is a semi vanilla world where the main goal is to make friends and hang out while you play.
The server is made for people who like to build cool stuff and grind the game together. It is not super complicated and it keeps the vanilla feeling so it is easy to join and just play.
They support both Java and Bedrock so you can play with friends no matter what they use. There is also a simple voice chat mod that gives you proximity chat so talking to people around you feels more real.

I found this server called Team Extreme and it is all about factions and pvp and not an smp at all.
You join and pick a side and focus on fighting and building up your base. The whole thing is about progression and grinding and getting stronger so you can win more fights.
There are multiple open worlds so you can mine and explore and keep moving around. It feels different from the usual smp servers because it is made to be a clean factions server with its own ideas and not just some copy paste server.
The server is on version 1.20.1 so it uses newer stuff from the game.
