This is a semi vanilla survival server that really focuses on quality of life and the old school Minecraft vibe. It does not use stuff like MCMMO and does not try to change the game into something totally different. It just feels like normal Minecraft with helpful features.
The community is small but very close. Some of the players have been together since 2019 and they rebuilt the server after it was abandoned in 2023. Now they are trying to grow again and bring in more people who want a friendly place to play.

I found this server called 5tarRock and it is a small semi vanilla world that is getting close to release. The owners have been building it for about four months and they made a completely custom map that looks really detailed.
The whole idea is about realism. You do not just get stuff for free and you actually have to work for everything. Auto farms are turned off so you cannot just afk and win. There is custom ore generation and custom combat and even a custom climate system so the world feels different from normal Minecraft.
The community is small and they are looking for more players who like a challenge and want to grind. Right now they are also running a 125 dollar contest for redesigning their logo and banner and all you have to do is make and submit a picture for a chance to win.

This is a hardcore vanilla server that is still pretty new and the world has only been open for less than a month.
When you join you start in a small protected spawn zone. You get invis and regen there and a few starter items so you can escape spawn and head out into the wild. After that it is all up to you.
The server is true vanilla. There is no tpa and no home commands. There are no ranks and no pay to win stuff. It is just normal Minecraft survival but on hardcore mode.
If you die you get temporarily banned from the server so every fight and every cave is a big risk. You really have to be careful and think before you jump into danger.
The server works on the newest update with Copper Golem and supports both Java and Bedrock players on the listed versions so more friends can play together.

This server is called Five Fate SMP and it feels really intense. Everyone only gets 5 lives so every fight actually matters. When you lose a fight you do not just die instantly. You can get downed instead and then you have 10 seconds for someone to save you.
The server is very pvp focused and people can steal your loot. Raiding bases is allowed and there is griefing but they try to keep it to a minimum. If you hide your base really far away like around 500 blocks it is fair game if someone finds it.
The owners say it is friendly for streamers and youtubers. They want more than 20 players so it feels alive. It is meant for players who are 16 or older and who like risky pvp and stressful survival.

Cobble Commons is a survival server that really focuses on the community and not on money. There are no paid ranks or pay to win crates. Everything you get is earned just by playing. The owner even self hosts the server so it is not going away just because of money stuff.
The world is built around towns and lands. Players use a land system to claim areas and build organized settlements and districts. Ranks are tied to building goals so you always have something new to work toward and it actually helps you get past build paralysis.
There is a pretty deep progression system with RPG style skills. You level things like mining farming and fighting and unlock passive abilities and stat boosts as you go. Ranks are also overhauled so you can follow different rank paths that match how you like to play.
