PeaMC is a pure survival server that feels like old school Minecraft. There are no teleport commands and no land claims. You just survive travel build and hang out with other players.
The community is chill and friendly. The owner and mods are active in game and also watch the server on Discord so it does not feel abandoned. There are teams you can make with your friends so you can build together and explore.
The server is vanilla style so there are no crazy plugins in your face. You move around the world by actually walking sailing or using whatever you build. PvP is allowed so you can still fight other players but it is not total chaos.
The rules are mostly about being respectful. No hacks or exploits. No harassment or slurs. No griefing or stealing from bases and no killing pets or spawn killing. PvP that blows up builds like crystal PvP or respawn anchor traps or minecart bombs is not allowed because it can destroy player creations.

Everbloom SMP has two survival worlds and both feel really different and cool.
The Everbloom Survival standard world is more intense. Farming is fully supported and redstone is allowed so you can build farms and machines. You even get nether roof access. PvP and raiding are turned on so you have to watch your back. The world has a big 75k border so there is a lot to explore and fight over. It feels like classic survival with more risk.
The Everbloom Survival casual world is for people who just want to chill. It is perfect if you like building and exploring and peaceful survival. There is no PvP and no griefing and no raiding at all. You can build bases and farms without worrying someone will ruin it. The world has custom terrains and structures but it still feels close to vanilla. The community on this side of the server is very relaxed and wholesome and focused on creativity and cooperation.
Both worlds run smooth and feel stable and the server works for both Java and Bedrock players so more friends can join together.

I found this server called Chilltown and it is a calm survival SMP with a really cozy vibe. It feels very close to vanilla but without a lot of chaos or pay to win stuff.
The server has been running since 2019 and the current world has grown over time with player towns farms and projects. It looks like the kind of place where people actually stay and build long term instead of resetting all the time.
There is a custom handcrafted world instead of just random terrain. The world also has seasons that change how everything looks which makes it feel more alive.
Chilltown has custom mobs weapons tools and enchants but they are balanced and not super overpowered. You can claim land using a simple chunk system so your builds stay safe.

Foggy Willows is a server for people who want real vanilla Minecraft with no tricks. It runs on the normal minecraft server jar and there are no datapacks and no plugins at all.
The server is hard mode and there is no teleport and no sethome and no world border. There is no fancy spawn or long books to read. You just join and start playing like a normal singleplayer world but with other people.
Players are expected to handle their own social problems. You can play how you want and build what you want. Technical Minecraft players are welcome too.
