Astral Swords is a Java PvP server that feels like normal Minecraft but with extra swords made just for fighting. It runs on version 1.21.10 and it is based in North America so the ping is good if you are close.
The server is mostly vanilla and does not change normal gameplay outside of a custom sword plugin. The plugin adds unique swords that are designed to be fun but also balanced so fights feel fair. Everything else plays like regular Minecraft survival.
There is no whitelist so you can just join and start playing. Players are allowed to build at spawn which makes the center of the world feel busy and alive instead of empty.
PvP events are hosted on a regular basis so there is always something to do if you like combat. There are no pay to win features so people with money do not get unfair advantages. It is all about skill and how well you use the swords in battle.

Iperios is a survival server where players build nations and fight for power. The whole idea is that you make your own country and then try to control land and resources.
You can start your own nation with your own government style. You can make laws and ranks for players in your group. If you do not want to lead you can just join a nation that already exists.
There are resource camps that can be conquered in game. These camps give special geopolitical resources that you use to grow your nation and expand your territory. There are many different resources and buildings you can work toward.
The server uses plugins like McMMO so you can level skills and get stronger. There are custom enchants to make your gear better. Dynmap lets you see the world map. GriefPrevention keeps your stuff safe and SilkSpawner lets you move spawners.
To get in you first join the server community and ask to be whitelisted. After that staff will guide you when you join for the first time and give you a beginner kit so you are not lost. Then you can start working on your nation or join someone else and get into wars and politics.

Elyria is a new Minecraft smp that is all about players hanging out and building stuff together. It feels like a small survival world where people actually notice when you join.
The server is focused on trading and building shops so players can make their own little businesses. There is also some pvp sometimes so it is not only peaceful but pvp is not the main thing.

This is a new hardcore Minecraft server that is still pretty quiet so it feels calm and not crowded.
It is full vanilla hardcore so if you die it really matters and you have to be careful all the time.
When you spawn in you get invisibility and regeneration so you can escape the spawn area and get somewhere safer before you start playing.
The server is crossplay so both Java and Bedrock players can join and play together.
If you want a simple hardcore world with not many people yet this server feels like a good place to start.
