I found EchelonMC and it is a hand built survival server on 1.21.1 that is made to last. It has been developed for about 2 months and it is hosted in Canada. The owner Eddy builds it based on player suggestions and they say over 100 suggestions are already in.
This server is trying to feel different from recycled SMPs. There is no pay to win and there are no main world resets planned. It is not a copy paste plugin pack style either and the focus is long term building real progression and a strong community. It also is not griefing focused.
You can earn Echelites currency just by playing like mining farming fishing exploring and building. There is also advanced land claiming with visual borders plus lots of settings like TNT and creeper control fire spread protection raid prevention fluid freeze mob spawn control and more.
There are teams so you can invite friends share access and use private team chat. There is auto pathing that makes paths under you and gives speed on them and you can toggle it. There are public builds you can list so people can visit vote and climb rankings. There are timed graves so your items are protected and you can recover them in a balanced way.
This server is built to be brutal and it feels like nobody is safe for long. Every time you die you permanently lose a max heart and it can drop all the way down to 4.
You cannot just eat and heal like normal because there is no health regen from full hunger. To get max hearts back you have to sleep near a campfire or use golden apples so healing is a real plan not a free thing.
Travel is scary too since there are no coordinates and no teleports. You have to use maps compasses and lodestones or you will get lost.
Getting to the End is harder because the Eye of Ender recipe needs items from four different structures. The End portal only stays open for 30 seconds and if everyone inside dies the whole End instance gets deleted forever. The dragon fight also has custom Ender Ghasts.
Beds do not set your spawn point. You rely on a Respawn Banner and if it gets destroyed you go back to spawn. Random Blood Moon events can happen too so nights can turn into chaos.
The first player to kill the dragon earns a Crown and the right to found the first nation and nobody has done it yet. It is for players who want a challenge on Java 1.21.11.

It has McMMO for skills so you can level up and get more RPG style gameplay while you play
Realm Ascendance is a Bedrock realms setup with two worlds. Each realm has up to 10 players online at once but lots of people can join overall. The idea is that more members means you are more likely to find someone playing when you hop on.
It is semi vanilla with some modding. It sounds like furniture stuff and quality of life add ons. The basics of Minecraft are not meant to change.
The owner is around to help almost all the time. The worlds are meant to run smooth and be consistent. You can build your own thing and do your own style. They also want people to try making civilizations and hubs if the group is into it.
The server is getting set up and should be ready in a few days maybe tomorrow. It will not really start until enough players join.
