I found this Minecraft hosting called Pixel Forge and it is all about simple servers that just run well. They use fast NVMe storage and modern CPUs and they tune everything for Minecraft and especially Paper. The plans are based on real performance not fake huge specs.

Foggy Willows is a server that really sticks to true vanilla. It runs on the normal minecraft server jar with no plugins and no datapacks at all. There is no fancy spawn and no big story to read. You just join and survive.
The rules are simple. There is no teleport and no sethome. There are no donations and no world border. It is always on the latest stable vanilla jar and the server is self hosted on a machine that was built just for it.
Players are expected to handle their own problems. If you argue with someone you have to sort it out yourselves. You can play how you want and build what you want. Technical Minecraft players are welcome because nothing gets in the way of redstone or farms.

I found this server called The Coffee Pot SMP and it feels like someones cool home project that is finally ready for more people.
It is a Minecraft network with five different worlds. There is a main SMP world with an economy system land claiming and some quests so you can actually have stuff to work on. There is also a hardcore world if you like playing on the edge and an adventure world that uses their old realms map so it has some history.
They also have a creative world and a modded world with cobblemon but those are still whitelisted so they are more locked down.
For a few days the owner turned off the whitelist on the main stuff so new players can join and help stress test. If you like it you can ask to be put on the whitelist later. The server runs Java but it also lets Bedrock players join so more people can play together.
The whole thing feels like a small chill community that is just starting to grow and they want people who actually enjoy the game to try it out.
