I found a server called MinecraftOffline and it is all about lifesteal and anarchy survival.
It runs on version 1.21.11 so it feels up to date. The play style is pretty wild since you can fight a lot and the lifesteal part makes every fight feel risky.

It is plugin based and it also uses a client modpack. Mobs are buffed and can even spawn during the day so it can feel more dangerous.
Mining is different because there are custom mines for iron gold and diamonds and they can cave in sometimes. Towny is used for claiming and there is claim upkeep so you cannot just grab everything forever.
Farming is also custom with seasons and crops that depend on the biome. Animals are not just free food either because you have to feed them and take care of them.

You can do optional geopolitical roleplay with lore and worldbuilding. If you want in you can mark a claim and staff will put it on the map so your story can start. You can also mark towns and settlements too. If roleplay is not your thing you can just build and chill since it is totally optional.
There is a short application before you can join and it is mainly to filter out griefers. After that you can get access to world edit and other helpful commands.
