This server is called Bone Voyage SMP RPG and it is working on a big Fishermans Guild update. The owners showed off a bunch of custom fish and crafting items that they are making for the fishing system.
Right now they already have custom fish like anglerfish shark squid clam clownfish and jellyfish. Some of them even have different cool variants. There is also a full tier system for fishing loot with legendary epic rare uncommon common and junk so what you catch matters a lot.
They are adding special crafting drops too like anglerfish bulbs clamshells shark teeth shark fins and jellyfish jelly. These will be used for new gear food and other items like armor necklaces soup and lanterns. Most of this is still in development and not fully available yet except the shark and its recipes.
The server feels like an RPG style survival world with a big focus on custom fishing content and expanding it over time. They are planning more fish materials roaming 3D fish and better fishing rods so the whole fishing side of the server will keep growing.

SMPPixel is a survival server that is part of a new network. Right now it is the main world but more servers are being worked on.
The server has a really nice looking spawn. There are special commands like magic and clickright that give you different fun systems to mess with when you first join.
If you want an easier start they also use codes that you can find in their community. It feels like they want new players to have a smooth early game and then get into survival and pvp once you are ready.

This is a Wild West style roleplay server made for Minecraft Bedrock players who like story and characters. The owner could not find a Bedrock RP server that felt right so they started building their own world.
The town is called Western Meithal. In this world you can choose different paths like being a farmer or being more academic and into new technology. The server is inspired by games like Bloodborne Bioshock and Red Dead Redemption. There are mods that make farming and fishing feel more real and there are classes and roleplay ideas that feel kind of like DnD.
Right now the server is still in development. Mods are being tested and buildings are being made. Base lore is being written but most of the story will come from the players. You can help create the history of the world, start new religions and maybe even become like a god in the story for the people.
Since it is the starting phase the server is in creative mode so people can help build and shape the world. Later when things are ready there will be playtesting and it will switch to survival. The community is small but very close and friendly and they want new people to join and help grow the world for everyone to enjoy.

This is a lifesteal style Minecraft server running version 1.21.11 and it is hosted in Finland so it feels really smooth if you are in Europe.
The world is permanent and there are no resets so everything you build and every fight you have actually matters over the long run.
The server uses custom written plugins that change the gameplay so it does not feel like plain vanilla. It is made to give a unique lifesteal experience while still feeling familiar if you already know survival.
The hardware sounds strong with a dedicated Intel Xeon cpu fast NVMe ssds a lot of ram and a solid network so it should handle players and fights without lag.
If you want an online lifesteal server that is focused on Europe and long term play this one is pretty cool.

OrianaMC is a survival server that tries to feel upgraded but still pretty chill. You can build your own town and then grow it into a full kingdom so it is really good if you like long term worlds and slowly getting stronger.
The server uses jobs and skills instead of admin shops. You pick a skill you like and then earn money by doing tasks like mining or farming so your normal gameplay actually pays you. As you play more you can unlock over ten different in game ranks that cost more each time and give better perks so there is always something to grind for.
There are custom items too. Mobs can randomly drop fragments and cores. You combine those into a Rubedite and then trade that for items that have special textures and enchantments that are stronger than normal vanilla limits. It makes fighting and grinding mobs feel more exciting.
There are also gemstones auctions and events so it is not just plain survival. The community feels relaxed and friendly and the server is made for players who want to hang out for a long time and slowly build something big.
The server works on version 1.21.8 to 1.21.11 and it even has a port for bedrock players so more people can join and play together.
