VitaNova is a new semi vanilla SMP server that just opened and feels really fresh. The world is custom and a lot of it is still untouched so there is a ton of space to explore and build your own base.

This is a survival server that is trying really hard to be actually vanilla. It runs on Fabric so the farms and redstone work how they do in normal Minecraft.
