Vanillacraft is a semi vanilla SMP that tries to feel like normal Minecraft but with other people around. It does not have a ton of plugins getting in the way so it feels pretty close to regular survival.
There is no economy plugin and no GUI shop. Instead players make their own shops and trade with each other so the whole item economy is run by the community. There is a market area and also a community spawn with farms and other useful stuff that people share.
You cannot just teleport everywhere. Players travel using the nether roof or with elytra so exploring and building roads and tunnels actually matters. There are also no land claim plugins so you can build where you want.
Griefing is handled by an active staff team and the Coreprotect plugin so they can roll back damage. The community is described as very friendly and welcoming and the server has a loyal playerbase so you usually see the same people online a lot.
The server just started a new season after resetting the old world so everyone is pretty fresh and starting again. There are no pay to win ranks and they do not even have a server store so progress is based on playing and trading not on spending money.

I found a small Minecraft Java server that is modded on 1.20.1 using Fabric. It is a chill place with about 5 to 6 regular players.
They made their own mod list with extra monsters and weapons and armor and furniture plus RPG stuff and dungeons. The point is to explore a lot and keep finding new things to do.

This is a hardcore SMP with a Death Note style twist. On the first day everyone has to join so the game can start right.
One random player gets the notebook. Their goal is to use it to kill someone. If you die you are out for good and you stay in spectator forever.

I found Aeon Network and it is a cracked server that is trying to stay fair and not pay to win.
It has three different game modes so you can bounce around depending on what you feel like.
Pitfall is the main one and it is based on the Hypixel Pit idea with 1.8 pvp. It has a custom perk points system and a rebirth progression thing so you keep grinding.
Survival runs on 1.20 with custom terrain and lucky blocks. There is no shop and no land claiming so griefing is allowed. The world border is 100k.
