I found Lounge SMP and it is a semi vanilla survival server on 1.21.11. It feels like normal Survival but with some custom features that stay simple.
The world is meant to last forever and there is a small world border. People mostly hangout build stuff and just play at a chill pace.
The server also says it has anti grief and strong anti cheat. There are jobs rewards crates and give aways too. Bedrock players can join as well.

I found a fresh survival server made by a small group of five people. They ran their last world for over three years then decided to restart and upgrade.
It is a vanilla plus style SMP that focuses on PVE. It runs on Fabric but you can still join using a normal Vanilla client and play fine.
The server has extra stuff to make life easier like better world generation from Terralith, fast leaf decay, proximity voice chat, a live map, claims, mini blocks and heads, gravestones, and backups. Since it is new they might change things if enough players ask.
They want to make a central shopping district and keep it simple with no currency mods. They also say they will never ask for money and donating will not give anyone advantages.

PvP is always allowed so you can get jumped anytime or start a fight whenever you feel like it.

Realm of Thrones is a small crossplay SMP that feels like a civilization server with PvP. People build kingdoms and try to grow them into huge empires. You can choose to fight and conquer or you can stay peaceful and make allies and trade with other nations.
There is a money system and you can rise in ranks by play time and in game cash. That makes you feel like you are progressing as you play more. You can also mess with configurable tech parts to build factories and chase the big industry life.
It has a bunch of quality of life changes so it does not get boring fast. I saw stuff like legendary fishing you can sell, crates, a server shop, player shops, jobs that pay you for playing, and McMMO leveling. They also just launched around 25 quests and it is new and still being tested with more planned later.

SableCraft is a small semi vanilla SMP that is trying to be a long term survival world. It is not aiming to be some huge public server that resets all the time.
The vibe is chill and respectful and it welcomes builders casual players and creators. It also says no pay to win no anarchy and no drama.
The server direction is meant to be community driven from day 1. They are doing Season 1 player applications and also optional staff applications and they post announcements and updates as things get closer to launch.
