Lumenor SMP Custom Vanilla With Choices
Lumenor SMP is a 24 7 custom vanilla survival server on 1.21.11 and it also lets newer versions join with ViaVersion.
It works for Java Bedrock and even cracked clients so a lot of different players can hop on.
The coolest part is the role system where you pick Passive if you want chill life or PvP if you want chaos. It lets both types of players exist on the same server without it feeling pointless.
The world has custom biomes and huge structures like ancient temples so exploration feels worth it. There are powerful rewards to find while you roam around.
There is a player driven trading shop that feels more like villager style trading and not some economy store. You can also practice in PvP and Passive arenas and keep inventory is enabled only in the arenas.

I found a small semi vanilla SMP that is in testing right now.
They said the real start is in about a week so it feels like a good time to get ready and join early.

This is a whitelisted vanilla survival SMP on 1.21.3 with a chill small community feel. It has a few tiny quality of life plugins but it still plays like vanilla.
The rules are light and the vibe is relaxed and casual. Griefing builds is not allowed but PvP is allowed and meant to be fair.
The goal is a tight knit group where people build explore and just hang out. New features might get added later if the community wants them.

Omega Realm is a friendly and open Minecraft server that feels like a hub with a few big modes to jump into. It is set up for players who like to play with others and build up over time.
The server has Factions where you can claim land build a base and protect it from other groups. You can make or join a faction with friends then raid defend and strategize. It also has custom made potions plus cosmetics and special features.
There is an SMP world for classic survival with friends where you gather resources explore biomes and build your own stuff. You can team up complete challenges and trade with other players.
There is also a Prisons mode where you start out mining and work your way up with ranks rewards and perks. It is meant to be fast and addictive with new features added.

I found 1fighter2defenders and it is a survival server that tries to stay as vanilla as possible.
There are no gameplay rules at all. No land claims and no protection so you can get griefed or you can grief back. Building cheating and everything else goes.
They also say there are no server sided dupes and there are no world resets. The server started in April 2021 so it has been around for over 4.5 years with lots of players showing up at least once.
