RuinSpirit is a semi vanilla PvE SMP that feels like a small friendly home. It was started by a player called troete and some friends and it is made for people who want a cozy place to play and build.
There is a big freebuild world where you can just explore build and dig how you like. If you want extra protection for your builds you can move into the CityBuild world and claim a plot and make your own little town or projects.
For gathering resources there is a separate farm world. This world is only for farming materials so you do not have to ruin your main builds when you need blocks or ores.
There is also a Lands system where you protect your own land and turn it into your personal kingdom. Here you can turn PvP on and fight with other players and even start clan wars. All of this is easy to manage with a GUI.
Active players get a money bonus every day on every half hour mark. New players do a short quiz before they start so they can learn how the server works. There is a GUI shop with lots of items to buy so you can gear up without it being too confusing.
Overall it looks like a relaxed community server with building land claims PvE focus and optional PvP for people who want some action.

So I found this server called TotallyNotSuspicious and it is actually kinda cool. It is a semi vanilla SMP that runs on Fabric 1.21.10 and it just started a new season on December 24.
They use Hermitcraft style quality of life datapacks so it still feels like normal vanilla but with small nice tweaks that make stuff easier without breaking the game.
The economy is fully player driven. There is no pay to win and there is no plugin based money system. Players trade and build things up by themselves.
They also have rules for quality control. It seems like they really want the server to stay clean and fun and not turn into a mess.
The vibe feels silly and loud but also friendly. They shout about not being bots and not being suspicious but the whole thing just feels like people who really like Minecraft and want a chill survival world with some structure.

Dogecraft is a survival server that has been around since 2018 and it is made for people who want to enjoy the game and also the people they play with. The main rule is no grief so your builds are meant to stay forever and you can just relax and play.
The server is hard difficulty survival so it is not super easy. There are jobs you can do to earn money and there are ranks you can work toward. Players can set up their own shops and trade with each other so the economy is built by the community.
There are a lot of custom features like custom items custom crafting and extreme fishing so it does not feel like plain vanilla. You can claim land and set up residences and it has a towny like experience so you can live near other players and make towns together.
Dogecraft also has dungeons events and PvE with player duels for people who like to fight in a fair way. There is furniture and cosmetics so you can decorate and look different but the server says it is no P2W so it is not about buying power.
From what I see the staff seem friendly and the community is welcoming. The server is built for people who want long term builds fun survival and a place to hang out without worrying about griefers.

Pixel Springs is a small modded SMP that feels really cozy and calm. It runs on Minecraft 1.20.1 and is made for builders collectors farmers and chill players who want a world that does not keep resetting.
The server has a ton of building and decoration mods so bases look really detailed and unique. There are also lots of farming and cooking mods so you can grow food cook meals and even earn in game currency for completing meals. If you like magic there are magic mods you can learn and use too.
Collectors have a custom FTB Quests system that gives goals and rewards while you gather items. The quests also help you learn new mods which is nice if you are still figuring them out.
There is an in game currency system where you earn coins from quests and daily rewards. Players use those coins to start shops and there is a shopping district where everyone builds their own store. There is also a separate resource world that resets sometimes so the main world can stay pretty and long term.
The community feels small friendly and welcoming and the admins are active and try to help and keep improving the server. The server is still pretty new and they plan to keep it running for a long time so you can actually settle down and not worry about losing your progress. They also run frequent backups because the world is important to them.

This server is a pure vanilla anarchy style survival world with ocean spawn. When you join you start in the middle of the water so you have to swim or use a boat to find land and that already feels like an adventure.
The world is super old and was first made in 2011 so you can find really ancient terrain and ruins. There is also newer terrain but you have to explore a lot to reach it. It feels like walking through Minecraft history.
The server uses just a few quality of life datapacks like trigger home and trigger spawn. You can set up to 10 homes per player. Nothing else really changes the gameplay or the terrain so it still feels like real vanilla.
There is an in game chat bot that the owner has been coding for years. Players can use it for useful stuff like home tpa and spawn commands plus some fun commands too.
The rules are very simple. You have to treat other players with respect and you cannot try to crash the server on purpose. Besides that almost anything is allowed including griefing and hacked clients so the world can get pretty wild.
Most of the players are in their mid twenties or older and a lot are from the US but there are also Russian Georgian and Polish speakers. The server feels relaxed and unstructured like a bunch of long time friends just playing and letting new people join in the chaos.
