I found a Forge zombie apocalypse modpack server that is trying to build a more active group. They want players who will stick around and not quit after the first day or week.
The pack is all about surviving with guns and dealing with zombies. It also has military vehicles plus tech stuff and Lost Cities so you can explore big ruined city areas.
It is a medium to big pack with 373 mods so you need a decent computer. They say at least 16 GB of RAM.
The world has not started yet and the start time is Saturday around 1 to 2 PM EST.

I found Summitcores Craft and it is a simple vanilla Bedrock server on the latest version. It is whitelist only and it keeps things basic with no mods and no fancy spawn.
The vibe is friendly and it is for people who want to play Minecraft like normal but with other players around. If you want to join you have to do a quick application through their Discord.

Kindred Vale is running Season 3 and it looks like a survival server that loves throwing new stuff at you.
The big thing is dynamic seasons with two dangerous realms each season. You can run into a Blood Moon and magical storms that make mobs drop enchanted items and books. There are also tornadoes that mess with the world and keep it feeling wild.
They also added a bigger cooking system with new crops and lots of new foods. There are 5 different cooking stations so you can actually make meals like it is a whole hobby.
Fishing got a full overhaul too. Each fish has its own look and you can try to catch them all for rare rewards.
Right now there is a St. Patrick's Day event until March 20th. When you mine ore you can find lucky clovers pots of gold or even a leprechaun that gives 10 points toward prizes. The server is on Java version 1.21.10.

MCVerse feels like it is made for people who want to stick around for the long haul. The main survival world is permanent and it is meant for big projects and long breaks without coming back to a mess. It is a no reset style SMP with a long term goal.
The gameplay stays close to vanilla. There are no custom items enchants or skill systems. There is still some quality of life stuff like teleport and builder tools like armor stands mini blocks and decorative heads.
Grief protection is a big deal here and the server talks a lot about no grief. You can grind classic survival or use player markets to speed things up if you want. You can also rank up for free just by playing and perks are available without paying.
Chat is kept pretty clean with low tolerance for swearing and public chat is meant for Minecraft and gaming topics. The community is international with players from teens to older adults and events are mostly player driven with admin support.
There are multiple modes you can pick from. The permanent SMP runs on 1.21.10. There is also a hardcore vanilla server on 1.21.10 and a vanilla no grief option with smaller claims that runs 6 to 12 month worlds on 1.21.11. Creative plots are also available on 1.21.8 for experimenting and building tests.

WorldBound SMP is a serious geopolitical survival server where players make nations and fight for land. It supports both Java and Bedrock so more people can join the same world.
The map is a big Earth style world made with real satellite imagery so the mountains rivers and coastlines look way more realistic. Every continent is meant to feel like the real thing.
Players can start small and grow into big empires by building cities and castles. The main vibe is diplomacy alliances rivalries and wars that change the world. The community is active and the story is written by the players.
