This server is called sVanilla Survival and it is all about old school survival and sword pvp. It has been around since 2019 and the whole idea is no cheating and real pvp raiding where only the strong survive.
The combat here is focused on melee so crystals and anchors are disabled. They patched things like breach swapping and there is a combat tag system. You cannot use elytra in combat and totems have an eight second cooldown so fights feel more fair and skill based.
The world is big with a large overworld plus nether and end so you can go far away to build or stay close to spawn for more action. The map does not reset so anything you build can stay there for a long time.
There are some quality of life commands like teleport ignore and sethome but the server still feels very close to vanilla. The economy has no plugins and is based on trading with other players. TNT dupers with pistons and slime are allowed so you can make farms or massive destruction machines.
You are allowed to raid grief pvp team up or even betray people as long as you follow the fair play rules. It feels like an older style SMP where players control the world and the server just lets it all happen.

The world is not normal either since it uses Terralith Nullscape and Structory. That means more biomes to run into and more structures to find while you explore.
There are custom mobs that still feel pretty vanilla like goblins and haunted armor plus elite mobs with special abilities that drop extra resources. They also plan to add minibosses and bosses later.
If you like upgrading gear there are over 80 custom enchantments and you can get them with the enchanter command. The server also has an economy with a shop auctions and even useful commands you can buy like workbench and disposal.

I found a big modded Minecraft server built around That Time I Got Reincarnated as a Slime. The goal is to recreate the Tensura world with a magitech vibe like Tempest. You start in the Capital City of Tempest and it was built by the community. There are Tensura characters walking around as NPCs and the screenshot shows stuff like Rimuru and Luminous and Testarossa and Ultima and Carrera as custom entities.
It runs on 1.19.2 and it is huge with 300 plus mods. There are over 2000 quests and a crazy amount of skills with their own quests to unlock them. You can pick from over 50 races and there are 500 plus evolutions plus custom dimensions. It also works like a standalone RPG even if you do not know the anime.
The main questlines are fully covered for Vanilla Minecraft and Minecolonies and Ice and Fire and Apotheosis and Create. The quests explain a lot so you do not have to alt tab all the time. There is a full economy system with shops and currency converting and skill mastering. ArcticMC is a brand new SMP that started a couple days ago and it feels pretty chill. It is a survival server that mixes Towny and factions so you can build a town and claim land then make alliances or fight over territory.
PVP matters here but it is not just random chaos since they use an honor system. The rules explain how it works so fights stay more fair.
It also has McMMO skills so you level up while you play and get special abilities as you progress. There are custom items too including furniture and it is entity based so they plan limits to help with lag.
