MoleCraft is a small survival group on Minecraft Bedrock that is for 18 plus players. It feels like a Hermit style place with a shopping area build events and some nation roleplay.
The community is tight knit and people are looking for a long term home instead of a crowded server. Players come from the USA Canada the EU South Africa and other places.
It is pure vanilla so you do not need mods or plugins. Console players can join easier too with a one click option. Voice chat is active if you like talking but it is never required.
They keep it a safe space with zero toxicity and strict rules against griefing.
Archive Network is a Gens x SMP server on Minecraft 1.21.x and it just started Season 4 with a fresh reset so it is a good time to join.
The world uses custom terrain so exploring does not feel like vanilla. You can grind resources build big projects or focus on fighting.
There are custom bosses and mini bosses you can challenge for higher tier loot. The server also has an advanced enchant progression system so you can push your gear way past normal.
Minearchy is a long running server that feels like a real community and it gives you more than just basic survival.

There are daily and weekly quests plus special events. PvP and PvE have their own zones so you can choose how you want to play. It also says no pay to win so you earn everything by playing.

I found a Minecraft server called MinecraftOffline and it is a EU focused lifesteal server on version 1.21.11.
It is hosted in Finland so the ping should feel nice for European players. The world is meant to be truly permanent and they say it will never reset.
It also uses custom plugins and it runs on reliable hardware so it is aiming to stay stable for long term play.
