I found a survival multiplayer server called The Garden and it is semi vanilla so it feels like normal survival but with extra stuff added to make it more fun.
It has cross play for Java and Bedrock and they recommend Java for the best time. The rules are strict about no hacking and no griefing and no stealing and no nonconsensual PvP.

Mysteria is a survival server that feels like it has way more going on than normal. It has a beautiful custom world to explore and it is built around discovery and challenge.
I noticed it has custom items and mythic style mobs so you can get special weapons and armor then fight tougher monsters for better loot. It also uses a land claiming system so you can protect your builds and manage who can do what.
