This is a small semi vanilla Minecraft server called Starfare Skyminer. When I joined it felt like a chill place to just play survival and slowly get stronger.
The main idea is to progress through different mines and upgrade your tools. You also get quests to do so it is not just random wandering. It feels more like you always have something to work on.
The server runs on version 1.20.6. It is not online all the time right now so it feels kind of like a cozy world that opens when the owner can host.
If you want a simple survival style server with quests and tool and mine progression and not a ton of crazy plugins this one is pretty good.

Back To Blocks is a Vanilla plus SMP that tries to keep Minecraft simple and fair. It is built around a chill vibe and it is not pay to win.
It has some nice gameplay tweaks like dragon damage tracking in chat. Mob spawns scale with how many players are on and there are per player mob caps so other people do not mess up your farms. Phantoms are optional and you can toggle them.
The server also focuses on running smooth with dynamic view distance based on load and fast leaf decay. You get handy commands like sethome and spawn and there are warps you can unlock through voting.
Chat has Mojang reporting disabled plus death coordinates and item and ender links. Builders get extras like armor stand editing invisible item frames custom player heads and map signing to stop copying. Waychest is a PvE survival server that feels like you are starting alone but it is actually one big shared world. You and your friends get placed into your own Journey with a random spawn point. It feels like a private realm at first but other Journeys are out there too.
The cool part is how you end up meeting people without it being forced. Special Waychests and other custom stuff act like clues left in the world. They can guide you toward places other players built and sometimes you even run into them for real.
There is also Waychest Flight where you craft an Elytra and it turns into a flying ring challenge that leads to a Waychest made by a stranger. I found Blitz Network and it is a new server focused on custom Bed Wars.
You can join matches and climb the leaderboards. You earn points while you play and then you can spend them on cosmetics.

MinedHype SMP is a friendly long term survival server that has been around for years with the same owner. It is a public server with no whitelist and it aims for a mostly vanilla feel on Minecraft 1.21.11.
The world is meant to last. The Overworld and Nether will never reset and there is no set world border or fixed spawn area. New players get spawned randomly within the first 40k blocks and you can use rtp to land somewhere within 50k blocks and then set a home.
It has grief protection using claims. If you do not claim your area then grief is allowed. CoreProtect is used to help protect the server.
There is no pay to win and no economy or money plugin. Shops are player run and they use item trades only. There is also a public shopping district you can apply to join.
