PeaSMP Semi Vanilla Survival Done Right
PeaSMP is a semi vanilla survival server that tries to keep Minecraft feeling normal. There is no teleport stuff and there are no land claims. You can just explore and build without the world feeling modded up.
It still has a few small extras for fun like wearing blocks as hats and sitting on slabs or stairs. You can also make teams with friends. The server is whitelisted so you have to apply in Discord first and that helps keep trolls out.
PvP is on but it is not the main focus and it does not happen much. New players get one hour of PvP protection. Elytras are disabled in combat and if you PvP log you die. You can loot enemy bodies.
The rules are simple. No hacks or exploits and no harassment. Griefing and stealing are not allowed even though PvP is allowed. Destructive PvP is banned so stuff like TNT minecarts beds end crystals and respawn anchors cannot be used that way.

I found a brand new Minecraft server that is all about starting your own venture and trying to get rich.
It uses a custom made plugin where you extract resources from land then you specialize in making stuff and selling it to other players. The economy is meant to be balanced and the currency is gold ingots.

ArcticMC is a brand new SMP survival server that mixes Towny and factions so you can build a town and claim land or team up and fight over territory.
PVP matters here but it is not just random chaos. They use an honor system and it is explained in the Discord rules so fights are supposed to stay fair.
It also has McMMO so you level up skills while you play like mining and combat and more. When you level enough you can unlock special abilities.
The world uses Tectonic generation so the terrain looks super nice with big mountains and valleys and lots of places to explore and build. There are also custom items like furniture and they plan to limit it per chunk to help with lag.

CaveMC is a semi anarchy survival server with an enhanced vanilla feel and the whole overworld is underground. There is no surface at all so you live in caves forever. The world is made with custom generation by real Minecraft developers so it has biomes resources and structures down there.
Season 2 is a fresh start with lots of new additions. Survival is brutal and you have to be smart to last.
There is also a big expansion called the Wasteland Dimension. It has its own custom generated map plus mega structures and mysteries to explore. You can fight for brand new exclusive gear and there is a unique currency that sets up a new player driven economy and trading.
