I found a community based survival server called The Eternal Region. It is whitelisted and it is aimed at mature players who want a calmer place to play.
It stays vanilla first but it also has some quality of life changes. Phantoms are off and endermen cannot grief and you get double shulker shells.
The world border starts small then it grows every day and it is currently 5000 by 5000. It also uses Simple Voice Chat so players can talk while playing.

BoonCraft is a survival SMP server with a small friendly community and players from all over the world. It is mostly PvE and it has a no griefing policy so people can just build and relax.
There is land claim to protect your builds and player warps so you can show off what you made. The server also runs community competitions and challenges and there is usually something new each week.
The economy feels stable and balanced and you can make money in a bunch of ways like player shops jobs quests the auction house voting and selling items. Custom fishing is a big thing too and you can catch lots of fish types and sizes then sell them to the Fisherman at spawn. There are also server wide daily fishing competitions.
If you want PvP you can toggle it and there is a dedicated PvP arena where fights are safe. You keep your inventory you keep your XP and your items do not lose durability.

Mythvale is a new Minecraft server I found that is built around a town claiming system. It uses a Towny style setup so players can make towns and protect their land.
There is also a war plugin made for the claiming system with siege battles. You cannot steal land from other towns but you can plunder their money so fights matter without deleting someones whole base.

This is a small laid back modded Minecraft server run by a few friends who want more people to play with.
It uses a curated mod list with new monsters and weapons and armor and mounts and resources and furniture and cosmetics. Even with the mods it is optimized and it runs on Fabric so it can be easier on lower spec PCs.
The whole point is to explore build and discover stuff together. It is not meant to be competitive or high pressure and it is more for people who like playing with others.
