I found a vanilla Minecraft server that is trying to stay small and last a long time.
It is meant to be a simple survival place where people can play together and keep the same world going.

I found a server called CrownMC RPG and it feels like a big open world survival MMO. You pick your own path and just start building your character with a bunch of skills you can level up.
You can farm for a chill life or focus on crafting and fishing. If you like money stuff there is an economy with shops and an Auction House where players run the market.
There are custom bosses and dungeons too and you can go raid them for special gear and crate keys. Health scales up as you gain experience so you can get way tougher over time.
The wild twist is the monarchy system. The crown is a real thing and if you find and slay the current King you instantly become the new King. You take their claims and can zone their kingdom. It is optional but it makes the server feel like there is always a power struggle happening.

I found a hardcore survival SMP called LUMI HARDCORE and it is mostly vanilla with one big rule. You only get one life.
If you die you do not come back right away. You end up in an infirmary until the next reset and there are no revives.
The world resets every 60 days so each season uses a brand new seed. That means nobody keeps a huge head start for long and everyone gets a fresh start together.

Ordinary SMP is a vanilla survival server for Java 1.21.11 that stays up to date with the latest features. It feels like a tight knit place with players from all over who like to build explore and just hang out.
The server is whitelisted so the player base stays respectful. They also use Ledger to track activity so griefing or stealing can be investigated and your builds feel safer.
There is a BlueMap live map so you can see the world better. It also has Simple VoiceChat for in game talking and an AudioPlayer for custom audio.
