I found JSMC and it is called Just Simple Minecraft. It is a long term Java survival server for 16+ players.
The big idea is themed regions. You pick a direction and join a group. Then you build in that theme and help a world that keeps growing.
It is trust based survival. There are no teleports. There are no land claims. There are no locked chests. There is no pay to win. The server wants proper builds and steady progression instead of wiping all the time.

It runs a custom vanilla plus setup made for this server. The changes are meant to keep the game feeling like normal Minecraft but smoother and more fun.
I saw a lot of quality of life stuff like XP orbs that fly to you speed on dirt paths auto ladder placing and a low health sound warning. There are also progression extras like farming giving bonus XP a guaranteed wither skull from the wither and player heads dropping on death.
The world has immersive touches too like biome discovery messages special crafting sounds wither summon alerts and piglins that can spawn with rare trimmed armor. For decorating there are armor stand pose controls arms enabled by default and a sit command.

The world is huge with a 300000 by 300000 overworld border and a 50000 by 50000 End border. That makes it easier to run far away but still run into players.

Misthaven is a modded 1.20.1 server that mixes arcane magic with brass and steam. It is built for people who want deep lore and immersive roleplay with real progression.
The world has custom structures and secrets to find. The lore is meant to reward curious players and punish reckless ones. You can play as a scholar chasing forbidden knowledge or a warrior who solves problems with steel. Choices matter and factions and secrets are a big deal.
It is RP and survival. The server says it is friendly and it runs with no restarts. There are lore events and character creation where you pick from 30 origins and 5 classes.

I found a small friendly Towny and SMP server called GamerHub Towny. It is made for chilling but it can still feel casually competitive. The community is welcoming and you can usually find people around in AU EU and US timezones.
The rules are clear and it is no grief and no stealing. They also say there are no resets ever so your progress stays.
You can build claim land and grow a town with Towny. It also has Jobs MCMMO and an in game ranking system. There is Dynmap so you can see the world. You get player warps and player shops plus a sell only server shop.
