Shadowburn SMP is a small modded server that runs on Minecraft 1.20.1 using forge. When I joined it felt like a survival world that just exploded with new stuff.
There are over 100 mods and they add a lot. There are new decorations so bases can look really cool. There are magic things to mess with and a bunch of new food to try. Weapons and armor are not just the normal diamond and netherite any more.
You can fight dragons and other strong mobs. You can focus on building a base and making it look awesome. Or you can just run around and experiment with magic and all the new gear. It feels like there is always something different to do.
The owners want people to hang out together and talk. They ask everyone to join their discord because that is where they post updates like when the server is down or when they add new mods. It makes the server feel more organized and easier to keep up with.
If you want a modded forge world on 1.20.1 with tons of stuff to explore and a smaller community feel then Shadowburn SMP is pretty fun.

Apathesia Whitelist SMP Zero Paywalls
Apathesia is a whitelisted SMP that runs on 1.21.11 and it is modded Fabric with Geyser so Java players and Bedrock and console players can all join.
The main vibe is that it is fully against money stuff. There is no economy and no crates and no ranks and no FOMO tricks. They also say no resets so your work is not getting wiped for hype.
The mods are server sided only so you do not need to download anything. The world gen is upgraded with Terralith Stellarity Towns and Towers and Incendium so exploring feels way less boring.
It also has QoL commands like rtp in a 20k radius plus home tpa and spawn. There is trade and mail and chest locking. They also have small cozy extras like crouch hearts sit hat and even chess.

I found playJAMS and it is a no pvp survival multiplayer server that works for both Java and Bedrock players.
It has land claims so your builds can stay safe and you get up to 4 homes you can set.
The nether is not always open. On weekdays it opens from 5 to 7 PM EST and on weekends it is open all day.

Waychest is a PvE survival server on Java 1.21.11 that feels like you start in your own quiet world. You and your friends begin in a Journey with a random spawn point and it can seem like nobody else is around.
As you explore more you learn the whole place is one shared survival world. Other Journeys are out there doing their own thing and you can eventually cross paths.
The big hook is the Waychests. These special chests can connect across the world and push you to travel farther and find what other players left behind. Later you can craft and place your own to guide the next Journey toward your builds.

Realm of Thrones is a crossplay SMP that feels like it is all about building civilizations and making a real community. People make kingdoms and try to level them up over time. You can go for power and conquest or you can stay peaceful and become a trade partner and ally.
It has a ranking system that goes up with in game money and your play time. As you rise you get more access and more prestige. It pushes you to keep playing and growing your nation.
There are configurable tech style parts so players can set up factories and try to become a big industry leader. The server also adds a bunch of quality of life stuff so it does not feel boring.
There is stuff like legendary fishing you can sell and crates you can test your luck with. You can use the server shop or make your own shop. You can also take jobs and get paid for playing while leveling them up. McMMO leveling is part of the grind too.
