Shadowburn SMP is a small modded server that runs on Minecraft 1.20.1 using forge. When I joined it felt like a survival world that just exploded with new stuff.
There are over 100 mods and they add a lot. There are new decorations so bases can look really cool. There are magic things to mess with and a bunch of new food to try. Weapons and armor are not just the normal diamond and netherite any more.
You can fight dragons and other strong mobs. You can focus on building a base and making it look awesome. Or you can just run around and experiment with magic and all the new gear. It feels like there is always something different to do.
The owners want people to hang out together and talk. They ask everyone to join their discord because that is where they post updates like when the server is down or when they add new mods. It makes the server feel more organized and easier to keep up with.

I found a server called Warshipcraft and it runs on Java 1.21.x with Paper. It also has a Bedrock port so more people can join in.
It has a lot of plugins like a ridiculous amount. The developer is active and the owner has been running it for years since 2017 so it feels like it is not going to disappear.

NoHackAnarchy is a semi anarchy survival server that has been running for almost a year.
It is about maximum freedom with minimal rules so you can grief raid build and survive. The big thing is you cannot cheat so no hacked clients and no xray even with resource packs.
It also blocks exploits and anything that tries to crash the server or lag it on purpose. Macros and automation tools are not allowed and chat spam gets handled with auto kick.

LegionCraft is a OneBlock server where you start small and grind your island up over time.
The big thing here is the challenging bosses. When you beat them they drop keys you can use for rare loot. There are crates too with epic gear and rewards so the grind actually feels worth it.
