I found a vanilla anarchy server that has been running for almost a year and it is all about survival and player made chaos.
It supports Java and Bedrock and it also works for console players through adding a friend.
The big thing is it is no hacks at all. That means no hacked clients no cheats no xray even in resource packs. They also do not allow exploiting server bugs crashing the server making lag or using macros and automation tools. Ashes of Hope Network is a new place to play Survival while it is still in beta or alpha. It feels like one of those servers that wants to grow with the players and add more gamemodes later.
The main thing right now is Survival with custom enchants plus a jobs system so you can earn money just by playing. There is also skills and progression so grinding actually feels like it matters.

DuckvileSMP is a small upcoming survival server in Season 5 and it takes inspiration from Hermitcraft. The whole point is to have fun and not worry about people griefing your base until you quit.
It is a Java server with some plugins and it has things like TPA plus claims and homes. There are also towns and cities where people can build houses and bases and hang out.
It runs 24 7 and it is self hosted with a max of 50 players at once to help avoid issues. The server does frequent events and it is meant to be long term with respectful members. This server is a modded event server built around a huge Maze Runner style game. It is set up for up to 100 players and everyone has to choose how they want to help. You can be a runner who goes into the maze for glory or you can stay in the glade and gather resources for your team.
The maze gets scary at night and creatures can trap you with no way out. The server also runs mini events while the event is live so players stay busy.
