I found a server called The WeaponSMP and it is a semi vanilla setup with a big focus on weapons.
It runs in phases and the first week is Phase 1 where only one weapon of each type can be crafted. Everyone is trying to end up with the most weapons and the winner gets a special weapon.
The next week Phase 2 starts and that is when custom weapons get added. The owner also wants ideas from players so it feels like the server can change based on what the community suggests.
