I found 2 Paws 1 Job and it is an anarchy server where players run the world and there are not a bunch of protection systems.
PvP is on and griefing is allowed so survival actually feels risky. People build big bases and roads then other players can find them and wreck them or turn them into ruins. The map keeps all the damage so the world ends up feeling like it has real history.
It supports Java Edition and Bedrock Edition and MCPE too so you can join from lots of devices. It runs on version 1.21.11 and it says there are no map resets.
