I found this competitive survival SMP that runs on a simple strength system. When you kill a player you gain 1 strength. When you die you lose 1 strength. Your strength shows how well you are doing so every fight feels important.
The server is hosted in EU London. It has proximity voice chat so you can hear people nearby which makes fights and meetups feel intense.
There are some clear rules like no cheating no x ray no exploits and no duping. You also cannot build bases below ground. Combat logging is not allowed and if you log out during combat you will get killed.
Ganking is allowed and traps are allowed so you have to stay alert. There is a TPA system with offline requests and villagers restock fast plus trade cycling. Combat log punishments are automatic and there is inventory rollback if it is needed.

I found a survival server called NoF3 and it is built around playing without the F3 menu. That means no coords and no normal debug info. The idea is you have to learn the world by traveling and making landmarks. Roads and transport builds matter a lot more. Maps and lodestones actually feel useful.
The server is whitelisted and it is strictly 18 plus so everyone is around the same maturity level. It also tries to make the Nether feel like something you conquer not something you skip. Nether roof use is not the vibe here and they want tunnels and real infrastructure. They also use a mod so portals remember where you came from and you do not have to do coordinate math even though the 8 to 1 ratio is still respected. Minecart experimental speed is enabled up to 120 blocks per second.
Natural regeneration is turned off so fights and early game are scary. Healing is more about planning like suspicious stew with regeneration and they added slow healing with honey bottles as a balance option. There are more changes too like villager trade rebalancing.
