I found Control SMP and it is a 1.21.11 vanilla style SMP that is made for competition. It feels like normal Minecraft survival but it has extra stuff to make it more risky and more about getting ahead.
PvP is a big deal here and player killing is allowed. Base raiding is encouraged so you are supposed to hide your base and play smart. If you mess up you can lose everything.
The whole server is about money and being the richest player. It has a player driven economy with player shops and an auction house. There are also custom spawners to help you grind and a bounty system so you can hunt players or put a price on them.
You can also team up with other players and make alliances or start rival groups. Before you play you are expected to read the rules.

This is a community centered survival server that tries to feel like a Hermitcraft style world. It has a diamond based economy with a shopping district. Players also work on public builds and big projects together.
Most people use proximity chat so it feels social when you run into someone. The server stays close to vanilla but it adds some cosmetic and quality of life plugins. New stuff gets added from community requests and polls.
