Legendary Hardcore is a hardcore SMP where death means you are out for good. There are no map resets and there are no revives so every risk feels serious. A lot of players have joined over its first year and tons have died trying to survive.
It stays completely vanilla but uses plugins to make hardcore more interesting. You can get player heads and you can access dead players ender chests. It also has Simple Voicechat and advanced player statistic tracking plus more.
The world feels like a real story because everything is player led and not scripted. People make bases and alliances then it all can fall apart when someone dies. There is even a player maintained wiki that tracks the history and a page for every player who joined lived and died.

It also has McMMO skills so you level up as you play and unlock special abilities over time. The world uses Tectonic generation so the terrain looks more realistic with big mountains and valleys.

I found a server called MCVerse that is made for long term survival and big projects. The main idea is no reset and no grief so you can take long breaks and not worry about your stuff.
It is classic survival grind with no custom items enchants or skills. You can trade with player markets to skip some grinding or you can play fully solo style like a single player world. You can rank up for free just by playing and the perks are free.
The community tries to keep chat clean and swearing is not really welcome. Public chat is meant for Minecraft topics and gaming.
There are a few different places to play. The permanent survival world is on 1.21.10 and it has things like claims a map markets clans and fishing contests.
