NisseSMP is a HermitCraft inspired server that runs on Java and Bedrock crossplay. It is vanilla plus so it stays close to normal survival but adds quality of life plugins.
The rules are simple. No grief and no PvP. There are no claims so people are expected to respect builds and play fair.
It has a player driven economy with shops and trading plus virtual currency. The community is active and you can usually find a lot of players online during peak hours.
