LazyCraft is a chill survival SMP I found that really sticks to the no paywalls idea. It is 100 percent free to play and it tries to keep a semi vanilla survival feel while still giving you a lot of helpful commands.
The world is made for long term play. The overworld is huge and the nether and end are claimable. There are also resettable resource worlds in every dimension so you can keep gathering stuff.
PvP is off in the overworld unless you go to the spots where it is allowed. Phantoms are also turned off everywhere which is honestly nice.
Building feels safe because there are strict no grief rules and you can claim land. You can fly inside your claims and start with free sethomes. You can also make towns with Lands and set up player warps.

I found NerdNu and it feels like a medium sized server that really cares about community and mostly vanilla gameplay. It is for players who miss that old Minecraft feeling where people actually know each other.
The PvE server is updated to 1.21.10 and it is survival building without PvP so you only worry about mobs. People work together on towns and big city builds and the PvE map reset on September 19th. They also do games nights with different player hosts like spleef thimble and ice boat races on Fridays at 7:30pm and Saturdays at 1pm US Eastern time.
There is also a Creative server on 1.21.10 with open world building and a mix of natural terrain and world painted areas. You can protect your builds and WorldEdit is free to use.
