I found SimpleHardcore and it is all about hardcore style survival where every choice matters. It is made for people who want a real challenge and want to see how long they can stay alive.
The gameplay is mostly vanilla and it feels clean. There are not a bunch of extras and it does not rely on overpowered plugins. It is focused on survival and long term progression.
