Ember Sky Network is a survival server in open beta. It tries to stay as vanilla as possible but it still adds some extra stuff to make things more fun.
There is a warp area for players who want to pvp each other. Fishing is still normal Minecraft fishing but you can sometimes get better rewards.
You can use player auctions to trade with other players. There is also land claiming to help protect your builds. Tool skins and cosmetics are included too so you can look cooler while you play.

Nova Network is a new Minecraft server that is getting ready to open and it looks like it is all about survival and progression.
From what I see the main idea is long term survival where you slowly get stronger. You can run quests fight custom mobs and unlock cool custom tool skins. There are crates and kits that you work through so the gameplay keeps changing instead of getting stale.
There is also a factions system so players can team up and build bases together. Factions can claim territory compete with others and shape their own part of the world. It feels like they want both teamwork and competition at the same time.
