I found a normal SMP that is launching on Feb 20. It is meant to feel simple and close to vanilla.
There is no economy system and it is not modded. It uses only a few plugins but they are not supposed to change gameplay much.
The server supports crossplay and it is up 24 7. They also say there will be no resets so your stuff can stick around long term.

Silence SMP is a lifesteal survival server that is getting ready to start a new season. It is in a pre launch phase right now with 12 active members and they want more players before it officially begins.
The main thing is standard heart theft PvP so fights actually matter. There is also a custom Dragon Egg plugin that makes the egg the most powerful item on the server and what it really does is kept secret.
They also have villager tweaks so you can pick up villagers and reset or change their trades until you get what you need. There are a few basic survival commands too like /string.
