I found EchelonMC and it is a fully custom survival server for Minecraft Java. It is built for long term building and teamwork and community progression.
It is not a server for PvP stealing or griefing. It has advanced land claiming with visual borders and lots of protection options like TNT fire spread raids and fluids.
There are custom systems like auto pathing that makes paths under you and gives speed bonuses. You can toggle it. You also earn Echelites currency just by playing and spend it on progression and utilities and quality of life.
It has teams with custom nametags plus public chunks so people can visit builds and you can earn rewards from visitors and climb build rankings. Deaths make timed graves for your items and there is a /back to help you recover after teleports.
The server is actively developed and it is meant to evolve with player feedback. Version 1.21.11 is recommended and older versions are supported. It is hosted in Canada and it has a spawn hub with NPCs plus voting rewards discord linking and anti x ray protection.

This server is called PlainSMP and it is starting Season 2 right now. I think it is for people who just like simple Minecraft and want to play with others without a lot of crazy stuff.
It is pure vanilla survival on Java 1.21.11 and they do not use pay to win or a bunch of random plugins. The whole point is to just play survival and enjoy the normal game together.
They are a small group but they sound really passionate and they want new players who actually like playing Minecraft a lot. People are encouraged to use proximity voice chat if they want to talk in game and hang out.
For Season 2 they changed things so now PvP between players is allowed. They want it to feel more like real survival and not just a super safe community world like last season.
