Ordinary SMP is a vanilla Java survival server on 1.21.11 and it stays up to date. It feels like a tight knit place where people from all over play together and actually build stuff as a group.
The server is whitelisted so the player base stays respectful. If something bad happens there is Ledger tracking so griefing or stealing can be looked into.
It also has BlueMap so you can check the world with a live map. There is Simple VoiceChat for talking in game and AudioPlayer for custom audio. The End dragon can drop elytra too.
There is a custom resource pack with cosmetics trophies and event rewards and it has a HermitCraft inspired vibe. They also run server wide events like PvP battles build contests and big community projects.

CheesyCraft Redux is a survival server with a semi vanilla style and extra features that were made just for this place. The content is built by the owner and the community and it is meant to still feel like Minecraft.
It tries to keep things clean and not stuffed with annoying bloat. You will not get spammed with crate style stuff or random resold cosmetics. It feels more like quality over quantity.
The server uses tools for claims and protection plus a voice chat plugin and logs for looking into issues. There is also an online map and it runs on version 1.21.11.

Bone Voyage MC is a survival server with a nostalgic SMP feel and a cozy welcoming community. It also leans into a pirate theme so the vibe is more adventure than sweaty tryhard.
The big promise is no server wipes so your builds and the world history stay. There is RPG progression too with custom items and the team is working on dungeons and questing as part of the main gameplay loop.

I found a modded survival server that is tied to a story based questing pack called Banished To The Wastelands. It is in public beta and they want playtesters. You can test it on the server or you can do it in singleplayer survival.
The server usually has a small group on at a time. Right now it averages around a few players.
The pack has a lot of content already with about one and a half dimensions worth of stuff and over 20 bosses. Some bosses are custom made. There are 156 mods and the pack is built so most of them feel changed to fit the same theme.
When you join you pick a race and a fighting style. That choice decides what combat and utility skills you can unlock. Your abilities grow as you defeat more enemies.
