I found EchelonMC and it is a fully custom survival server on Minecraft Java. It is new with about a month of active development and it is hosted in Canada. Version 1.21.11 is recommended and older versions are supported too.
The vibe is serious building and teamwork. This is not a server for PvP stealing or griefing. It is made for people who want to build together and keep progress going long term.
A lot of the systems are custom coded and the server says it has no pay to win. They patch it a lot and they actually take player feedback to shape features and balance.

BeeetCraft is a community made Minecraft server that is all about fun and relaxed survival with real world building. It is still super new so it feels like joining at the start of something.
The main server right now is a Chill SMP with vanilla plus tweaks to keep things balanced. Netherite armor and The End are disabled for now so everyone stays on the same pace and the world grows together.

PurpleSMP is a small survival server that feels simple but still polished. It is mainly PVE and it is made for people who just want to build and relax on the latest versions like 1.21.11.
It uses mcMMO so leveling up skills makes grinding feel more fun. The economy is player made with no server currency and no shop system so trading is up to the community.
Your stuff is meant to be safe here. Blocks are logged and staff can check it. Join leave and death backups are kept so staff can restore your inventory if you lose items because someone broke the rules.

CoreMC is a long running survival world that is trying to stay as close to real Minecraft as possible. It uses the stock vanilla jar and the world started in 1.18. The world does not reset so it is more about long term projects.
It is a whitelist style server and anyone can join no matter your skill. The server is not very active so it fits best if you like late game building and making your own goals.
