I found Fools Ambrosia and it is a small modded server that is really big on story. The world is about mortals and immortals and how worship made gods survive. Wars happened and new gods rose up and almost everything fell apart except for four gods who made something new which is you.
This server goes roleplay first and gameplay second. They do scheduled events for different timezones and some are chill and some are heavy on lore. Events can be made by players or by admins and they really want everyone to get a chance to matter in the story.
It runs a lightweight Neoforge modpack with around 160 mods and it is meant to work on weak computers too. They also talk about a custom built server backend and an admin team that stays active and keeps improving things. The mod list includes Origins with 16 choices and Biomancy 2 for the weird flesh stuff.

It is set in a custom region called Viridia where the wild areas can be scary and the city lights hide secrets. Pokemon are treated like friends but also like tools which makes the world feel a bit darker.
The idea is that different creators start far apart in the region and each one follows their own storyline. The stories can connect over time and it is meant to be high effort and multi perspective.
They are looking for builders and writers right now to help make the world and the lore. Later they also want POV content creators server developers and actors to play NPCs. It is not paid and it is meant to be a passion project. Crying Skies is a Minecraft server with a Norse mythology theme and it is built around a real story. The lore and the structures are already added and it does not use vanilla structures at all.
If you join you are expected to take part in the story and not just ignore it. The server is meant to feel like an adventure where the world and its history matter.
Griefing is not allowed. PvP is turned off most of the time but it can be turned on for certain fights.
