I found StableSMP.ca and it is a long term survival server where players shape the world as it grows. It starts fresh and it is meant to keep going with no resets so your builds and choices can actually matter.
The server keeps the vanilla survival feel but adds extra progression systems you can choose to use. There is a player run economy with shops trading jobs and an auction house so you can grind money and become the server merchant.
It also supports cross play so Java and Bedrock players can play together. PvP is optional and there are risk zones if you want higher stakes while other players can stay more peaceful.
