Europa Prisons is a Bedrock prison server that is back for a second beta round. It is built for competitive gameplay and it is trying to feel smooth even when a lot of people are on.
The server uses custom stuff like JSON UI and scripting so it does not feel like a basic setup. During this beta your progress is being saved until the testing period ends.
You can join from PC mobile or console. Console players can also join by adding the Gamertag EuropaOG.
They also want help from people who know Bedrock development. They are looking for JSON UI editors scripting specialists and systems admins. Since it is beta they want players to report bugs in their Discord so they can polish things before full launch.

I found a server called Infinite Islands and it is all about starting an island and building it up. The cool part is it never resets so your progress sticks and the world can keep expanding as you grow.
There are custom cave systems with multi level caves. The ores regenerate so mining stays useful and there are custom mobs plus bosses down there too.
Fishing is a big deal here with over 100 unique textured fish to catch and collect. There are also 60 fishing mobs to fight.
The server has hundreds of quests so you always have stuff to do and a clear path to progress. There are seasonal payouts so you can compete hard or just play chill and still fit in.
