Origin SMP is a survival multiplayer server that just started a new season and it runs on 1.21 for Java and Bedrock.
The whole vibe is story driven and competitive. PvP has a tier system where getting kills moves you up and dying drops you down so fights actually matter.
There is proximity voice chat so people can talk in game and make deals or start beef right on the spot.
There are no land claims so the world is run by trust and politics instead of protection plugins. The world is also finite at 2500 by 2500 blocks so players run into each other a lot.
It is semi anarchy so a lot is allowed but random griefing with no story or purpose can get rolled back to protect the long term SMP stuff.

There are Origins and RPG style mechanics with ValhallaMMO plus Levelled Mobs. You also get Seasons and Brewery and custom recipes. The server is still in active development so expect new mechanics and changes as it grows.

Kingdoms of Elysium is a modded faction RPG server that feels very social and very chaotic. It is built for player politics and big choices and constant interaction. The world is magical and it uses Apotheosis and Iron Spells.
It is not the usual factions style with safe land claims and quiet towns. PvP is more about tactics and planning than just having the biggest group or the most free time. Being brave or sneaky can pay off more than grinding all day.
The economy is risky on purpose. You have a balance system but also physical money so you can carry gold and risk losing it if you die or hide it somewhere safe.
It also avoids scripted roleplay and avoids admin driven outcomes. Stuff like morality and war and logistics and your reputation pushes the story instead. Towns can be built or attacked and they can have NPCs and lore and religions and rituals.
Progression is slowed and expensive gear costs more and the server focuses on early game variety. Boss drop gear is randomized so items roll different stats and you have to think about your build and not just armor value.
