I found a smaller SMP called Klawcraft and it is not super popular.
It is a survival server with magic stuff and it seems pretty cool.
It is starting tomorrow so it sounds like a fresh start if you want to jump in early.

PlayCraft is a new Minecraft Java SMP that is looking for active long term players who are 18+.
It is semi vanilla survival on hard and it runs on Java 1.21.11. Achievements are enabled so you can still go for them. One player sleep is on so nights do not drag.
The rules are simple. No griefing no stealing no cheating. PvP only happens if both players agree so it stays chill and fair.

There is a custom FTB Quests setup that helps you learn mods and get rewards. There is also a separate resource overworld dimension that resets sometimes so you can keep exploring without running out.
Magic players have options like Botania and Hexerei and Mystical Agriculture and Ars Nouveau. Animal lovers can find more creatures with Naturalist and Aquaculture and Faunify and Pollys Pets and Rats. If you care about looks there are hats and costumes and more armor and clothes.
The community is small and friendly and still growing since it started about three months ago. The admin team helps out and the server does frequent backups.

I found a small survival server that just started Season 3 and the world is still super fresh.
It is Minecraft Java 1.21.11 and it feels like vanilla with only a few quality of life changes. The main idea is just exploring building and surviving with a friendly group. They do not want it to turn into a huge public place.
Pvp is only if both people agree. Griefing and stealing are not allowed. There is also optional proximity voice chat if you like talking.
One cool extra thing is custom player heights so you can pick how tall your character is. The server is meant to be long term with no plans for resets and they are looking for mature players 17 plus who want to stick around and help the world grow over time.

Elysium is a small Java server that just reopened with a fresh start at the beginning of November. It is looking for more players and it is meant to be 18+ even though a few long time members are 16+.
The server has multiple worlds with a main Hub for traveling. You can use /spawn or /hub to get there and it has places to hang out plus an amphitheater for community gatherings and events.
Survival is on 1.21.10 with a 10k by 10k world border and mcMMO skills. It is trying to feel more vanilla since teleport commands are turned off except for a /home bed. Players use Nether roof travel instead and there is a spawn shopping district with chest shops that use diamonds.
For building there is a Plots world with 85 by 85 plots so you can build in private. You start with one plot and can earn more by moving up build ranks. There is also a Creative superflat freebuild world for bigger community builds and higher rank builders. There is a second Creative world too that is a build rank perk and it is more exclusive for showing off builds. Griefing or changing builds without permission is not allowed.
It also uses DiscordSRV for linking chat and syncing names between Minecraft and Discord.

SableCraft is a small vanilla SMP that is meant to last. It is not trying to be a huge server that wipes all the time. The point is to start from the beginning and let the world and the group grow together.
The vibe is chill and respectful. Builders casual players and creators are all welcome. There is no pay to win stuff and it is not anarchy. They also want no drama and want the community to help shape what the server becomes from day 1.
They have a Discord where applications and announcements happen. The launch is coming soon so it is a good time to get in early.

Shards SMP is a fresh survival server that just went live about 18 hours ago after months of development and testing.

I found a small geopolitics style Minecraft server called 5tarRock and it is semi vanilla on Java.
It has a medieval times vibe and it uses a bunch of in house made plugins to help it feel like that.
The server also has a huge detailed custom map that tries to be realistic like a planets geography.
The owner is redoing the server right now and they want a more active community instead of a big older playerbase.
