I found Elior MC and it is a completely vanilla Minecraft server. It is made so people on Java and Bedrock can play together.
The server is brand new so it feels like a fresh start. It is whitelisted so you have to apply to get in.

I found a newer Minecraft Java SMP that is focused on semi vanilla survival on hard. The world has been running for about three weeks so it still feels pretty fresh.
It is for adults only 18+ and they want active long term players. Achievements are enabled and one player sleep is turned on.
The rules are simple. No griefing and no stealing and no cheating. PvP is only allowed if both players agree.
